This is the top Chardonnay from one of Tasmania's hottest young winemakers.
Ricky Evans has nailed his third Dog & Wolf Chardonnay. This fruit was whole bunch pressed to barrel for a natural ferment with partial malo occuring in oak.
Ricky blends two sites for this wine: Waverly to the east of Launceston and Three Wishes in the East Tamar. One picked earlier for bracing acidity, the other picked later to get the right balance of full flavour.
The finished wine is a legitimate cool climate Chardonnay, showing oyster shell, white fruits and flowers and pure acidity. Two Tonne Tasmania is quickly becoming one of the Apple Isle's most sought-after labels. These limited release wines under the Dog & Wolf label fly out the door quicker every year.
