One of Remi's fortes is maintaining brilliant natural acidity in his wines. The crisp, laser-like acidity in this wine keeps it on the straight and narrow and keeps the ripe peach and apricot notes feeling fresh as a daisy. His idea for tripe.Iscariot centres around the thesis that from 'berry to stalk' the whole of the plant should be used in the winemaking process.
