About The Wine

The Aspic Rosé from Remi Guise sits firmly in the 'serious' Australian Rosé category.

This Grenache Rosé from Margaret River with grunt and definition. A world away from the fluffy, insipid Rosés of old, this combines effortless drinkability with structure and power.

Some fermentation on stalks, some fermentation in oak and 9 months of bi-weekly lees stirring have dialled this wine up to 11.

For those exploring the upper echelons of pink wines in Australia, this rockstar Rosé is a must try.

About tripe.Iscariot

Remi Guise is starting something very compelling in Western Australia.

His idea for tripe.Iscariot centres around the thesis that from 'berry to stalk' the whole of the plant should be used in the winemaking process.

No waste, no 'cleaning up' of the wines. Driving to make the most character filled and unique wines that any site can produce.

The wines are fascinating and complex alt-stylings of undervalued Margaret River varieties.

Dig in, this is a project to keep a close eye on.

Additional Info

From The Producer

A rose made from Grenache. The hand-picked grapes were de-stemmed, crushed and left on skins until just enough colour had been extracted. The very slightly pink juice was then separated from the skins and settled over night on the stalks that were removed earlier.

The juice was then part fermented on stalks in a stainless steel tank and then allowed to finish fermentation in oak barrels. After fermentation the wine was barrel aged for 9 months, during which the barrels underwent battonage every two weeks.

The wine was then removed from barrel, clarified and bottled.

Critic Reviews

The Wine Front

"It’s pale and more than a little Provençal in character. Redcurrant, ruby red grapefruit, gently spiced and perfumed. Bright, fresh, a little tang and fine dusty texture, pretty and subdued, almost to white wine in character, but with the softness of red. Finishes crisp and long. A great thing to drink. So beautifully made." - Gary Walsh (The Wine Front)

Halliday Wine Companion

"Pale bright fuchsia-pink; this is a serious rose, not just some juice run off the real wine. Grenache from Karridale is crushed and drained, settled, part fermented with whole bunches in tank, the ferment finished in used puncheons, likewise 9 months maturation. Remarkable intensity and balance, with small red fruits, spice and the finest possible tannins." - James Halliday (Halliday Wine Companion)
