About the Wine
The Te Mata Cape Crest Sauvignon Blanc is a barrel-fermented wine with heaps of character. Unlike the traditional iterations that focus on passionfruit, apple or pungent, vegetal aromas, often with very delicate flavours, this wine has some heft to it.
Ageing the wine on lees adds texture and flavour, with citrus, blossom and stone fruit joined by the savouriness of herbs, beeswax and smoke. You don't have to open the bottle immediately in order to drink it young, but you can leave it for a few years for added complexity, with enough acidity to helpt it retain some zing for years to come.
