About The Wine
As a rule of thumb, Italian white varieties are so much more about texture than they are about 'fruitiness', which is why they fit the bill for Tim Sproal's winemaking so well.
Here he combines the mouth filling, waxy savoury components of the Fiano grape with the zippy and spicy characteristics of Vermentino to make a fresh but textural white wine perfect for quaffing on its own or tackling a wide array of food.
There's very little done to this in the winemaking. It's about letting this great Heathcote fruit express itself naturally. The wine is downright delightful.
About Minim
Minim Wines is the love-child of Tim Sproal, a labour of love that started with just one tonne of Shiraz and a milk vat in a mate's garage.
Tim sources small parcels of fruit from Central Victorian vineyards that farm with care. The wines are all about texture and energy, Tim's less-is-more winemaking approach bringing a great feel to the Minim range.
These are clean and energetic natural wines with loads of personality.
