Nic Peterkin has taken his time to produce his own rendition of Margaret River's flagship red variety, Cabernet Sauvignon.
He was waiting until he found the right vineyard. In 2018, he found it.
This certified organic and biodynamic site in the northern end of the cape was unkempt and wild. The vines grew between free-roaming pigs and guineafowl, flowers and native weeds. With no herbicides or pesticides used, it was a veritable organic wonderland for Cabernet to grow and thrive.
Nic hand-harvested the fruit, individually hand selected the berries and bunches that would make the cut, then fermented the fruit in barrel for one year before release.
It's a very impressive wine - powerful and beautifully detailed. It feels like a coming of age wine for this vanguard WA producer.
For the L.A.S. Vino Cabernet, it was 100% worth the wait.

His wines are out there, challenging the status quo of one of the country’s most respected wine producing regions. This is the “New Guard” of Margaret River, and the wines are coming out all guns blazing.
Nic is playing with some varieties off the beaten path of classic Margaret River. Nebbiolo, Touriga Nacional and Sousao, all finding a home amongst his eye-catching range.
There's some serious substance to his project, being named as the 2016 Gourmet Traveller Young Winemaker of the Year for his eclectic and tantalising releases.
