About The Wine
Macerato takes its name from the maceration on skins of the three key Sicilian varieties: Cataratto, Zibbibo and Grillo. Each variety is planted in a slightly different part of Sicily's North western corner around Alcamo.
Cataratto and Grillo make natural bedfellows, the former bringing bracing acidity and the latter fullness and weight. The clever part of this wine is the addition of Zibibbo to bridge the gap between these two natural opponents and fermentation on skins amplifies the cohesion.
Fresh, waxy, textured and aromatic, this is a complex and contemplative wine but to be honest, you had us at Sicily.
About Elios
What do you get when you cross a computer programmer and an oenologist? Well, in this case, you get Elios, a passion fuelled natural wine project from the stunningly beautiful hills of Alcamo, Sicily.
Guido (the wine one) and Nicola (the computer one) share a love of Natural wine, nature, and a desire to reclaim their families’ agricultural holdings and, to use their words, pull them 'from under the thumb of industrial groups'.
Their vineyards are farmed biodynamically and organically and their winemaking is Natural, they use no additives at any stage.
The wines are as vibrant, energetic, and passionate as the pair themselves and they make a super addition to our Sicilian line up. Fans of skin contact should look out for their stunning Orange number, Macerato.
