About the Wine
Olivier Morin is making some world class wines from Chitry, which just happens to have the same Kimmeridgian soil as Chablis. Armed with such a valuable resource, all it took was a little bit of love and a lot of dedication to make a truly stunning Aligote.
Fruit was sourced from organic vineyards and was fermented with indigenous yeast strains before time on fine lees in stainless steel. Being so gentle in the winery has definitely had its benefits - the wine is aromatic, lean and fresh but full of complexity. Fresh apples and lemons come through, with a chalky mineral drive, and a delicate breadth and toastiness. This isn't Poor Man's Chablis - it's a delicious Aligote in its own right.
About Domaine Olivier Morin
After originally starting a career in music, Olivier Morin took over his family's winemaking business in 1992. The family had been in the wine trade since the 17th century, in the small Burgundian town of Chitry.
With his wife Nelly, Olivier crafts wines from land which is only a stone's throw away from Chablis, home to some amazing Chardonnay-based wines. While not certified organic, they endeavour to farm by these practices as much as possible.
Domaine Olivier Morin focuses on reds from Pinot Noir, whites from Chardonnay and Aligote, as well as sparkling wines (Cremant de Bourgogne) from Pinot Noir and Chardonnay. The wines always show amazing value and Olivier and Nelly's dedication to the grape.
