While Chasselas is not often thought of as one of the more prestigious grapes in France, winemaker Dominique Lucas aims to shatter perceptions with his unique and individual expressions.
Quintessence is a result of Dominique's recent négociant project, a wine from the Crépy AOC near Lake Geneva. Since this does not share the AOC of the rest of his wines, he has decided to label it under a separate name - 'Les Vins du Leman', named after the neighbouring Lake.
A fantastic entry into Dominique's awesome array of Chasselas wines, the Quintessence is like the first peek inside the rabbit hole.
About Les Vignes de Paradis
A 5th generation winemaker with his origins in Burgundy, Dominique Lucas has chosen what seems an idealistic pursuit; to make Chasselas in the Savoie that stands with the best white wines of France. Despite the grape's low reputation, Dominique has been planting them on serious terroirs overlooking Lac Leman (Lake Geneva) and farming them biodynamically since day one.
His vines are separated into 27 parcels of different soil composition, each of which is harvested by hand and vinified separately.
Though his family’s history is steeped in Burgundian ways, you won’t find much of this influence in his cellar as Dominique vinifies his grapes in an array of different amphorae, barrels, and concrete eggs, without following any specific path, rather trusting his intuition and intent.
