About The Wine
The "Padi-hegy" vineyard is the Jakab winery's original plot of vines, bought by winemaker Zoltan Jakab's father in 2006. Sitting on south-facing stony and volcanic slopes, this vineyard produces steely wines with intense minerality and structure.
Jakab employs a light tough in both the winery and vineyard, using as few additions as possible. The grapes go through a spontaneous fermentation in a mix of old and neutral French, Hungarian, and Austrian oak barrels, ageing for around 11 months. A small dose of sulphur is added just before bottling.
About Jakab
Zoltán Jakab began the Jakab winery in 2007 after falling in love with winemaking as a child watching his grandfather tend a small patch of vines and make wine for the family. A former medical doctor, he left the profession when his father bought a plot of vines in the Padi-hegy vineyard of Tokaj, Hungary.
A chance encounter with fellow natural winemaker Attila Homonna led the two to build the Jakab winery together, gradually acquiring more vines and producing more land year by year.
Today the pair tend to a few different vineyards across Tokaj, always farming organically and working with as few additions in the winery as possible.
