About the Wine
The Vaillons release is one of a range of premier cru Chablis from the small domaine of Moreau-Naudet, all of which display uncommon richness to complement the traditional raciness of the region.
Moreau Naudet deals with time-; painstakingly hand-picked, slower elevage (often in old oak), time on lees, and a delayed release to market. They are a delight in youth, but will reward the patient.
Sourced from a trio of fifty year-old vineyards within Vaillons, grown organically, then vinified separately before blending. A great balance of zesty, salinity and some exotic bosominess.
About Moreau Naudet
The late Stéphane Moreau was one of the great heralded iconoclasts of his generation, taking a fresh approach to farming grapes in Chablis.
His wines received rave critical acclaim for their ripe, unadulterated expression of the region that proved leaner isn't necessarily better for showcasing the differences in terroir across the region. Natural yeasts, biodynamic farming and a general high-care-low-interference philosophy was making him one of the hottest names in the region.
Sadly, Stéphane passed away unexpectedly in late 2016. To their credit, his wife Virginie and his assistant winemaker took up the mantle and have continued to farm and make wines true to Stéphane's style and methods. These wines are brilliant for their generosity and individual character.
