About This Wine
Born from an intuition and passion for this type of wine, this sparkling is produced with 100% Nebbiolo grapes, which by nature and tradition would normally be destined for classical Gattinara DOCG red wines.
The first vintage of this wine was produced in 2011, after having spent a few years testing the method and process to create this style of wine. These trials allowed Stefano to hone his craft and understand how to make Nebbiolo in this style.
Bright pale pink colour with hints of red onion skin; intense perfume, slightly fruity, with notes of bread crust and yeast. On the palate its dry and fresh, with good acidity, a persistent bead and excellent balance, with notes of small red fruits and a delicate bitterness.
About Cantina Delsignore
One of the historic producers in the Gattinara appellation, Cantina Delsignore's roots date back to when Attilio Delsignore, married Elsa Nervi of the Nervi family.
As with the birth of many wineries, the union of families also became a union of their landholdings. here including key vineyards in Valferana and Permolone.
Sadly, Attilio passed away when current custodian (and grandson) Stefano Dorelli was just ten years old, and at the time, no one was available to assume responsibility for the estate. The family mostly sold grapes to other producers but made a small amount of table wine for the family’s consumption. Finally, ten years later, Stefano left his career to return to Gattinara, take control, and revitalise the family estate.
The winemaking here is strictly traditional. Macerations are fairly long, and the Gattinaras are all aged in older, used Botti.
