Few producers pushing the Pet-Nat envelope as far as Paul Starr at Sassafras in the Canberra district.

He never sits still, constantly refining his take on the ancient sparkling technique. And the results are seriously impressive. The 2017 Sassafras Chardonnay Savagnin Ancestral is one of his best to date.

Ned Goodwin MW gave it huge wraps in the 2019 Halliday Wine Companion rating it a massive 96 points - the higest score for any Pet-Nat in the country.

Perhaps a leading producer in this wine style for Australia - if you'd like to try some 'serious' Pet-Nat, then the offerings from Sassafras are an excellent place to kick off.

The Ancestrale method, aka �Pet Nat', refers to a gentle sparkling expression for which the first fermentation is finished in bottle, leaving varying degrees of sweetness married to a soft, frothy bead of fizz. Scrumptious cider-like aromas of bosc pear and red apple are coaxed across a light body of frothy freshness, by a gentle fizz and leesy nourishment. "More magic in the naturally sparkling department from top pet nat mob Sassafras. Unnerving consistency with the tricky-to-make-good style. Here savagnin and chardonnay get together, a Jura-esque coupling nurtured to brisk fizz by the continuing ferment in bottle. Cool gear. Everyone around the bench loved this. Shook the bottle out into last glass. Spicy, flinty start, almost breathtaking, definitely eye-watering in its citrus and steel lift in perfume, very fresh you could say. Touch of creamy depth to taste, blistering acidity underlying, good foamy bubbles, starburst of ripe, juicy, lemony tang to finish. Joyful stuff. This is great drinking. From The Producer

Our 2017 Chardonnay Savagnin Ancestral is made with Chardonnay grapes from Tumbarumba and Savagnin from Canberra. The Savagnin drives the aromatics and flavour of this wine with a crisp citrus-driven palate and a fine bubble. The wine smells of apples, lemon sherbert and gentle florals.

Made by the Ancestral method, using the original grape sugars and yeast, it was carbonated in this bottle. Like a bottle-conditioned ale or cider, there will be a small amount of yeast at the bottom, so chill upright.
