About The Wine
Technically, this wine has no name, only the bizarre image on the front of the bottle so for sake of ease we are going to call it Catbird.
"It's kind of based around the concept of the wine being a bit of a mongrel, in terms of how it was made (whole bunch white picked pretty late, no fining, no filtration, no sulphur)."
This is the Out of Step boys stepping out into uncharted territory, an experimental wine for them, hence the 90 dozen production.
As sometimes happens in wine, this just worked. It's made from Sauvignon Blanc but the variety is hardly relevant, this is just great fun and something a little different!
About The Producer
Dave Chatfield is the man behind the Out Of Step project.
After working vineyards in the Yarra Valley for years, Dave decided it was time to start his own thing.
The philosophy behind his wines: “To be great it must be real, expressive & honest.”
The wines are made with very little tinkering in the winery, allowing the great vineyards he sources fruit from to shine.
Based in the Yarra Valley, but sourcing fruit from various parts of Victoria, Out Of Step is forging a reputation for serious, eye-catching wines at a great price.
