About the Wine
Spiced with a granitic minerality, this wine has so much going on - blackberries and mulberries, summer fresh, balanced with old word elegance and structure.
Hand picked and sorted, destemmed fruit fermented separately to whole bunches. Gentle pumping over initially with an ambient yeast ferment and approximately 37 days on skins. Hand plunged. Pressed off to a mixture of seasoned oak and a new Francois Frere puncheon (20%). No added sulphur and only 40ppm at bottling. Bottled unfined & unfiltered July 2018.
The highly regarded Tibooburra Vineyard is located in the south-eastern central part of the Yarra Valley, Victoria. The ‘Yellingbo’ part of the vineyard was planted in 2001 to shiraz, on its own rootstock. It sits about 240m above sea level on a south-west facing slope. With a black top soil, it is supported by yellow duplex subsoil.

One Block by Jayden Ong is an independent, artisan wine producer specialising in cool climate single vineyard sites. Jayden has developed strong partnerships with a number of high-quality vignerons who utilise sustainable grape-growing practices. He has also planted his own vineyard in the Yarra Valley from which the fruit for his eponymous wines are sources, and with all his fruit sources Jayden continues to work towards 100% biodynamic farming.
The wines are detailed, pure and expressive with an alluring character defined by the vineyard and vintage.
