Some exciting expressions of Adelaide Hills wines coming from the hands of Tim Stock and the shed of Commune of Buttons.
Tim sourced a small parcel of biodynamically grown Sauvignon Blanc from a Gumeracha vineyard, left some on skins, all went to old oak, no additions aside a dab of sulphur at the end.
It's such an interesting take of Sauv Blanc from the Hills imbued with soft phenolics and a touch of savoury complexity.
Absolutely worth the look for those on the hunt for whites with a bit more going on.
