It's treated oxidatively, with a long and slow ferment followed by lees contact and full malo-lactic fermentation, with just a touch of sulphur added for stability and freshness.
It's an exciting wine for those who are exploring the multifaceted nature of Sauvignon Blanc and a great representation of the originality of this awesome Victorian producer.
About Eastern Peake / Latta Vino
Is anyone working as hard as Owen Latta to put Ballarat in the mix of Australia's foremost wine regions? At only 15 years old he completed his first vintage at Eastern Peake alongside his father and has since taken on the full-time running of the business.
Owen is the man primarily responsible for both the Eastern Peake and Latta wines, the former of which being dedicated to premium Pinot Noir and Chardonnay from the Eastern Peake vineyard, and the latter being Owen's personal project all about innovation from a range of excellent central Victorian vineyards.
The wines are all gently brought to life with very astute yet hands-off winemaking, and Owen's low and zero-sulphur wines are some of the best examples in the country. These are thrilling, absolutely unique Victorian wines, and quite simply Owen Latta is one of Australia's finest young winemakers.
