About The Wine
When making wine, Remi Guise wastes nothing. His philosophy is what he calls, "Berry to Stalk", the idea resembling that of the 'nose to tail' movement now so popular in cuisine.
His 'Marrow' Syrah Malbec is a gorgeous, sumptuous example of the benefits of his practice. He co-ferments the two varieties with some whole bunches, creating a seamlessly integrated wine from the beginning of the process.
The 2017 has an 'old world' edge to it, with the emphasis squarely on savouriness, elegance and charisma. I was sucked in by this wine when tasting, a beautiful thing that Remi has created.

His idea for tripe.Iscariot centres around the thesis that from 'berry to stalk' the whole of the plant should be used in the winemaking process.
