About The Wine

When making wine, Remi Guise wastes nothing. His philosophy is what he calls, "Berry to Stalk", the idea resembling that of the 'nose to tail' movement now so popular in cuisine.

His 'Marrow' Syrah Malbec is a gorgeous, sumptuous example of the benefits of his practice. He co-ferments the two varieties with some whole bunches, creating a seamlessly integrated wine from the beginning of the process.

The 2017 has an 'old world' edge to it, with the emphasis squarely on savouriness, elegance and charisma. I was sucked in by this wine when tasting, a beautiful thing that Remi has created.

About tripe.Iscariot

Remi Guise is starting something very compelling in Western Australia.

His idea for tripe.Iscariot centres around the thesis that from 'berry to stalk' the whole of the plant should be used in the winemaking process.

No waste, no 'cleaning up' of the wines. Driving to make the most character filled and unique wines that any site can produce.

The wines are fascinating and complex alt-stylings of undervalued Margaret River varieties.

Dig in, this is a project to keep a close eye on.

The Wine Front

"Game meat, turned earth, raspberry liquorice, Chinese five spice, a melange of attractive, savoury scents. Medium weight with crisp acidity and fine, feathery tannins, showing a mix of ripe berry/plummy fruit, more bloody game meat, some pepper and very faint green herbs. It sloshes around the palate assertively, gulpable and delicious, wildly approachable yet with a quiet complexity too. Hearty yet fresh feel likewise. Wicked drinking." - Mike Bennie (The Wine Front)

A medium bodied red blend made from hand-picked Syrah and Malbec Grapes. Part of the harvest was fermented as whole-bunches, submerged under the remainder of the fruit, which was cold-crushed on top. After a two day cold-soak the fruit was warmed and fermentation began.

After 10 days on skin the wine was basket pressed and allowed to finish fermentation in barrel. The wine was barrel aged for 10 months, during which the barrels underwent battonage every four weeks. The wine was then removed from barrel, clarified and bottled.
