About the Wine

Salo is the project of two of the Yarra Valley's most loved winemakers - Steve Flamsteed (of Giant Steps fame) and Dave Mackintosh (Arfion main man).

This 2016 Chardonnay is the perfect, high-quality example of what these two brilliant winemakers are trying to achieve. The fruit comes from the cooler Gladysdale sub region of the Upper Yarra Valley, with all the hard work being put in in the vineyard rather than the winery. It's very simply whole bunch pressed into old, large format oak, with wild yeasts no additions.

It's a natural, energetic, highly characterful Chardonnay, expressing the slightly wild side if these two wonderful winemakers. A great release of this delicious wine.

About Salo

Salo is a collaboration between two of the Yarra Valley’s finest winemakers: 2016 Gourmet Traveller Winemaker of the Year Steve Flamsteed and front man of cult-favourite Arfion, Dave Macintosh.

For talent and experience in this region, there aren’t many who come close to this formidable duo. Their wines are only ever made in small batches, usually 200-250 dozen at a time, and represent a meeting of the minds of these two winemaking superstars.

Viticulture

Our Chardonnay was grown by Simon Harte at the high altitude, Full Moon Vineyard in Gladysdale, Yarra Valley. Simon farms the red basalt clay soils with the utmost care. He tends his Chardonnay vines like his own personal garden and has got amazing results for us. The 2016 vintage certainly tested him. It was fast and furious. Ideal growing conditions in Spring 2015 meant that canopies were dark green and full of energy. Flowering was the earliest on record in early November, so we had an inkling we were in for an early one - generally speaking harvest is about 100 days after flowering.

As usual, we were watching the acidity very closely and with the warmer than average summer nights - even the high altitude of the Gladysdale Hills - we decided to jump in on the 22nd February to pick. This is the earliest we have ever harvested for this site. Thankfully, yields were naturally very good - at 2.6 tonnes/acre, which helped balance things out. The flavours were a lovely version of melon and white stonefruit , with a good crisp acidity. It was just a really beautiful growing year.

Winemaking

That’s the hard bit done, the winemaking was very simple… Fruit was sorted in the vineyard, then whole bunch pressed to 500 Litre french puncheons, wild yeast fermentation, no Malo. The large oak vessels we use are all second, third and fourth use, so they have been “tempered”. We find that using larger, older vessels suit Yarra Chardonnay, as we don’t want the purity of the fruit flavours encumbered by any oak character. After 10 months of natural settling, Salo was racked to tank for a short chill in December. Bottled on the 18th January, 2017.

"It’s bound and tight at first but as it breathes it really blossoms. This is a lovely chardonnay. Indeed the volume of fruit is impressive, a wealth of white peach and grapefruit flavour coming nuanced with meal and mineral. I put this wine aside a few times and every time I returned the palate seemed to have extended out further. Notes of hazelnut and indeed fennel eventually come forward; what impresses mostly though is the wine’s gorgeous purity." - Campbell Mattinson (The Wine Front)

Warehouse Pickup Due to some restrictions on our warehouse lease agreement and COVID concerns we are no longer offering Warehouse Pickup as an option and will be delivering all orders moving forward. Express Same Day Delivery is available for Sydney postcodes within 10km of the CBD. There is a $10 delivery surcharge and the order is needs to be placed before 12pm midday weekdays for same day delivery. Express courier deliveries cannot be left unattended and require a receiver signature.

Do I have to order in dozens?

No, please mix it up! You can order wines in any quantity and variation you like. You can order 1 bottle or 50. We challenge you to make the ultimate mixed pack of wine!

Are there volume discounts?

No our pricing is aiming to the best in the market already. For very large orders (weddings etc) we are open to negotiating though. Just give us a call. How does the price match work?

Everyday Low & Consistent Pricing is something we strongly believe in. We want our customers to feel confident they are always getting the best price. If you see a price lower somewhere else let us know and we'll match it. We'll even retrospectively refund you if you have already purchased from us but you see a lower price somewhere later on. Our price match policy can be seen here.

I am trying to add more of a wine to my cart but it won’t let me?

This means we are running low on stock of that wine. So for example, if the website will only allow you to add 3 bottles and no more, then that is all we have of that particular wine. The good news is we may be able to order more for you. Just contact us on 1300 668 385 or hello@differentdrop.com and we'll organise the additional quantity for you.

Does Different Drop have a physical store?

No, not really. More of a warehouse/office. We do however offer a Click & Collect option from our warehouse in Ultimo, Sydney. Our warehouse address for Click & Collect is: F5A, 42 Wattle St, Ultimo, 2007

Can I special order a wine you do not sell?

If it’s doable, then we’ll make it happen. Just contact us directly via phone, chat or email and we’ll find out for you right away. Please note that in most cases special orders such as these will need to be in full case lots (6 or 12 bottles).
