About The Wine

This wine is a bit of a mind-bender.

It's dry Palomino (the major variety in Sherry) made in a dry, oxidative, slightly flor-affected style. It's going to pull you in all directions - it's at once salty and salivating, then also showing an explosive basket of fruit, it's dry, it's smoky, it's flat out excellent to drink.

This wine is indicative of the sort of boundary pushing Ramiro Ibañez is up to in the Jerez region.

He's a one of the young guns of the region, taking Sherry into brave new territory.

This is a blistering wine, but be warned, it may not taste like anything you've tried before.

Additional Info

From The Producer

This Vino de la Tierra de Cádiz is 100% Palomino but of various types: Palomino Fino (73%), Palomino de Jerez (16%) and Palomino Pelusón (11%). The grapes came from the small finca Las Vegas in the pago Carrascal where some of these old varieties can still be found in its albariza soil of the lentejuelas type.

This soil highlights freshness – but the freshness comes from the chalky soil not from the acidity. It tends to be loose and crumbly with more sand and thus quite porous. The vineyard is close to both Sanlúcar and the Atlantic. The wine was fermented in butt and left there to age for 20 months or so, unfortified, with the butts full enough to keep flor at bay.

Blend : Palomino (100%)
ABV : 12.5%
Closure : Cork
Drink Until : 2027
Bottle Size : 750ml

"Salty, herbal, just a touch reductive (smoky) but also lightly yeasty from the flor influence. It is extremely crisp and fresh but there's a rounded feeling in the mouth to bring the wine into balance. Though winemaker Ramiro Ibañez says he is 'looking for imbalance' – in the sense that he wants to show off this specific terroir. There's also ripe citrus (12.5% is quite high from Sanlúcar) and amazing length and intensity." - Julia Harding (JancisRobinson.com)

“The regular Ube has turned into 2015 Ube Carrascal, as there are now Ube bottlings from Miraflores (already bottled from 2016) and Maína (to be bottled from 2015). 2015 was a year of concentration. The wines retained good acidity but it's a powerful vintage from a warm and dry year. It's from the same vineyard that contains some 73% Palomino Fino, 16% Palomino Jerez and 11% Palomino Pelusón and the wine matured in bota with flor for 20 months. The vines were planted in 1903 and contain a mixture of old Palomino clones that are almost extinct. All these wines ferment in bota with indigenous yeasts, are single harvest and are never fortified. 1,000 bottles and 40 magnums were filled in May 2017.” - Luis Gutiérrez (The Wine Advocate)
