Vin Jaune isn't to everyone's liking, but those who like it tend to be hooked, and the Anne & Jean Francois Ganevat Cotes du Jura Vin Jaune is the sort of wine to attract many passionate followers.
Made from 100% Savagnin, the wine is aged in barrel and allowed to evaporate, rather than being topped up with fresh wine. The juice sits under a layer of flor, a type of yeast (commonly used in the creation of fino sherry), which protects it but also creates the most wonderful and unique aromas and flavours: nuttiness, honey, creamy and cheesy characters, as well as a rich and full mouthfeel. Definitely one of those wines you need to add to a bucket list!
