The fruit was hand picked from their estate blocks, fermented partly in old barrels, and then bottled for an exceptionally long rest. It spent close to ten years on lees before disgorgement, and that time has shaped the wine more than anything else. The bead is fine, the texture refined, and the savoury layers are starting to show without overwhelming the natural line and freshness Tasmania is known for.\u003c\/p\u003e\n\u003cp\u003eYou get gentle citrus, a little baked apple, and that subtle nutty complexity that only emerges after real time in bottle.
