Mounir and Rotem Saouma have a non-tradtionalist approach to their white winemaking. Here, they have selected thier favourite barrel from the 2013 vintage and combined it with the lees from many other barrels to enhance texture and presence in the glass.
A long extended time on lees follows before bottling without fining or filtration. The couple believe that this helps avoid premox and presents the most pure, unadulterated expression of place.

About Lucien Le Moine
Lucien Le Moine is a partnership between husband and wife team of Mounir and Rotem Saouma.
Theirs has been one of the most talked about negociant operations on the modern Cote D'Or. They actively source parcels from the finest Premier and Grand Cru vineyards up and down Burgundy.
Winemaking wise, they have been touted as one of the benchmark 'modernist producers', however, Mounir believes that his long, slow elevages and minimal use of sulphur harken back to the Burgundy production of an era gone by.
On their operation, Jancis Robinson wrote, "An extraordinary micro negociant in Beaune. Very serious quality." These are powerful, complex wines of imposing quality and stature.
