The Ravensworth Bitter Tonic is a project Bryan Martin has been tinkering away at for a few years.
In 2016 a particular batch of Grenache struck a cord with him. It was too light for his Tinto blend but had wonderful aromatics making it the perfect base for a Vermouth-like concoction.
It’s perfect for cocktails or, as Bryan recommends, poured over ice with a slice of orange. An elixir to hit the spot when you feel like something a little different.
There wasn’t much made and it’s selling like hotcakes into bars and restaurants. Be quick if you want to squirrel away a bottle for yourself.
What It Tastes Like
This is a drier, spicier version of Vermouth than many on the market. Hyper aromatised, crackling with peppery spice. It’s crunchy and dry with some chompy tannins cutting tracks along the tart raspberry and lime flavours. A whip crack of pepperbush, szechuan and orange rind to close. Wicked drinking.

Bryan Martin is a winemaker at the height of his powers. Setting aside the exceptional work he is doing behind the scenes at regional flagbearer, Clonakilla, his Ravensworth wines have become some of the Canberra region’s hottest releases. Bryan’s winemaking style is equal parts science and artistic flair. He’s an adventurous spirit trapped in the body of a technical virtuoso. A concert pianist jamming to free jazz. It’s a killer combination. His range is full of alternative varieties and whacky blends, with texture and balance the key in everything. Truly unique wines from a region on the up and up and some of Canberra’s most sort after wines.

Grenache is the great sleeping giant of Australian red wine. We are the custodians of the oldest producing Grenache vines in the world, some ancient vineyards planted as far back as the 1850’s. Modern Australian Grenache is a different beast to the wines of yesteryear, they are more youthful and vibrant, showing bright red fruit characters, silky tannins and a delicious array of spices.
