This is the Holly’s Garden Blanc de Noir; made from 100% Pinot Noir fruit, this is a blend of eight and a half vintages worth of fruit. With low dosage and the complexity that comes with the compounding of multiple vintages, this is a deliciously textural bubbles and great value from this small biodynamic producer.
What It Tastes Like
Heaps of nutty, chewy, caramelised apple characters. This is some ballsy bubbles. Some slight hints of honeycomb. Good mouse, love the golden colour. Really makes its presence known, great drinking and loads of interest at this price.
