Hanging Rock have been making quality Sparkling from their Macedon Ranges vineyards for decades.
Winemaker John Ellis is one of the country’s leading craftsman of traditional method Sparklings. His NV Hanging Rock Brut Rosé is excellent value - some serious pink fizz for the dollars.
It’s made from base wine stretching back to 1987, a great place to start if you are trying to build complexity into a Sparkling wine. The Pinot Noir and Chardonnay are grown on the Jim Jim vineyard planted by Ellis in 1983. A few drops of Pinot Noir are added at dosage to give the vibrant colour.

In 1983, we planted the first vines in our ‘Jim Jim’ vineyard, situated at 650m above sea level. Our aim was to make a great Australian sparkling wine. We planted Chardonnay and Pinot Noir, the same classic varieties used to make Champagne. We also trained and trellised the vines in the same manner as the Champenoise.
As per our other ‘Macedon’ sparkling wines, Macedon Rose is made using a non vintage blend of base wines, made from pinot noir and chardonnay from our own vineyard, dating back to 1987. The base wine spends an average of 4 years on yeast lees in barrel before being tiraged bottled. Each one of our ‘Macedon’ sparkling wines starts from this base.
Our ‘Macedon’ Rose is aged on-lees in the bottle for a minimum of 12 months. A couple of drops of Pinot Noir are added to the wine at dosage to give the wine its salmon colour.

About the Producer
The Hanging Rock Winery was established in 1983 and is located in the Macedon Ranges Wine Region (Australia’s coolest grape growing region), just an easy one hour drive from Melbourne. The property (known as ‘Jim Jim’) was purchased by John and Ann Ellis in 1982 as a bare block. Their aim was to make Australia’s best sparkling wine. Many who should know, believe that they have achieved this with their acclaimed Macedon NV Brut and Macedon NV Brut L.D. Whilst they decided to build the dream in the MacedonRanges they have always had a love and affiliation with Heathcote as a Shiraz growing region.
No variety captures the hearts and minds of the wine lover quite like Pinot Noir. It’s the unicorn of many a winemaker. Notoriously fickle to grow, this delicate red variety can deliver a kaleidoscope of flavours and aromas, from the bright and floral to the moody and mysterious and everything in between. The cooler regions of Australia are where Pinot Noir is most at home. Look to Tasmania and Victoria for the best examples, with some quality wines beginning to show from the Great Southern and from the cooler parts of NSW. Falling in love with Pinot Noir can be a life long affair, beware the charms of this most enchanting of grapes.
