About The Wine

Pheasant’s Tears was founded in 2005 by American John Wurdeman and Georgian local Gela Patalishvili, with a mission to preserve the ancient traditions of Georgian winemaking for the next generation.

The history of Georgian winemaking stretches back over 6000 years, though many of the old techniques were being lost to modernity. John set up his winery, complete with qvevris (an earthenware fermenting and ageing vessel similar to amphora that is buried in the ground) up to 200 years old and set about producing wines that tell a rich cultural picture of the country and its history.

This is a skin-contact white wine made from one of the many indigenous varieties unique to Georgia. It spends up to six months on skins buried in the ground before release without any additions or subtractions during the winemaking regime.

It's a spicy, exotic, textural orange wine with crystalline acidity and a wild personality. A great example why the Pheasant's Tears wines have rejuvenated interest in Georgian wine the world over.

Additional Info

From The Producer

All of our wines at Pheasant’s Tears are fermented and aged in qvevri, a unique Georgian vessel used to ferment and store wine.

Qvevri were the first vessels ever to be used for wine fermentation, with archaeological finds dating back to 6000 BC. Qvevri are clay vessels lined with beeswax and completely buried under the ground where the temperature stays eventhoughout the year, allowing the wines to ferment in the natural coolness of the earth.

Pheasant’s Tears qvevri vary in age but, some date back to the mid 19th C. We built our cellar in the vineyard itself to minimize the damage to the grapes in transportation, allowing us to harvest and press before the hot hours of the sun. It is usually a question of hours before the harvested grapes are already pressed and in the cool qvevri.

In accordance with Georgian traditional winemaking methods, the ripest of stems are added to the grape skins, juice and pits, for both our reds and our whites. The maceration time depends on varietal and the size of the qvevri and varies between 3 weeks and 6 months.
