For his serious take on Sauvignon Blanc, Hamish Young travels to the Southern side of Murrumbateman.
Around a quarter of the wine was fermented as whole berries in concrete vessels, the balance in stainless. The real key to the wine, however, is the time it spent in old oak - that added texture from the wood and that little extra time to mature before bottling sets this apart as a much more interesting, textural and savoury style of Sauvignon Blanc.
If you like your Sauv with a little more going on under the hood, this version from Hamish is flat out delicious.
