It's a marriage of three different vineyards, multiple different winemaking approaches, and all sorts of vibrant deliciousness.\u003c\/p\u003e\n\u003cp\u003eSome of the fruit is co-fermented, some of it is left on skins for three weeks, some of it seeks carbonic maceration and time in oak, then it all gets blended together to become the perfect red fruited, aromatic and easy drinking red. We all know what great fruit and a deft touch equals.\u003c\/p\u003e\n\u003cp\u003eIt's got a focus more on dark fruit flavour than their Clare Valley reds, with chewy tannin and a bit more of a broodiness to its personality. Whole berries, wild ferments, a short spell on skins, then time in large oak and concrete before bottling it with no fining and no filtering.\u003c\/p\u003e\n\u003cp\u003eIt’s got a real Mornington weight and presence to it. Ripe red fruits, a flicker of spice, and a smooth ride of tannin through the finish. When we tasted the 2025, we commented that it feels like Barney's pulled back on the structure and upped the slurpability in this release. It's hard to picture a better value entry into Mornington Pinot than this little beauty.\u003c\/p\u003e\n\u003cp\u003eThis is one of our most popular wines every year. We’ve followed the Mada story since the early days, and seeing how he handles this Hilltops fruit year-on-year is a highlight for us.\u003c\/p\u003e\n\u003cp\u003eThis 2023 comes from the Bit of Heaven site in Wombat, grown on granite-rich clay loams. He’s given it 14 months in oak, but kept the new wood to just 15% - just enough to give it a framework without masking the fruit. It’s all about that gentle touch in the cellar: de-stemmed fruit, three weeks on skins, pretty classic for Sangio.\u003c\/p\u003e\n\u003cp\u003eIt’s got that classic Sangiovese snap - think crunchy cranberries, rose petals, and a hit of fresh garden herbs. The tannins are silty and fine, making it incredibly bright and drinkable. Sourced from a high ridge of an ancient sand dune in McLaren Flat, the fruit was handpicked, wild fermented, and left on skins for five weeks, before ageing for 15 months in old French oak to preserve aromatics and purity.\u003c\/p\u003e\n\u003cp\u003eWhat we're left with in the glass is a translucent violet hue with a nose that leaps from the glass - jalapeño, alpine herbs, violets, and roasted bell pepper all swirl together, underpinned by rose petals and mulberry. The palate is silky and mouth-filling, with pure, ripe fruit, subtle spice, and papery tannins that glide into a long, smooth finish.\u003c\/p\u003e\n\u003cp\u003eA Loire-inspired yet uniquely Australian take on Cabernet Franc, this is bright, fragrant, and dangerously drinkable - but with enough structure to age beautifully. It’s a mid-weight red that really celebrates the bright, crunchy fruit you get from those cooler slopes. Aaron avoids heavy oak here to let the fruit do the talking, so you get heaps of plush cherries and raspberries with a nice little savoury hit of dried herbs on the finish.\u003c\/p\u003e\n\u003cp\u003eIt’s an unpretentious, easy-going red that’s perfect for a mid-week pasta or a casual BBQ. Sourced from Angus’s own vineyard (planted in 1995) and a site in Broke, it’s wild-fermented with a touch of whole bunch and then aged in concrete and old oak. The result is a light, energetic red full of red berries, spice and a little floral lift.\u003c\/p\u003e\n\u003cp\u003eIt’s the kind of wine that takes Hunter Shiraz in a fresher, more playful direction.
