About the Wine
You might know Brendan and Laura from their wine exploits at Unico Zelo, but they're also doing some fantastic things in the spirit world at their Applewood distillery.
The vision is to create spirits with Australian ingredients, to create something unique instead of just emulating those made overseas.
They take barley from SA, then ferment and distill it in the Adelaide Hills. It then goes to sleep for four years in barrels made of jarrah wood (straight from Eucalyptus trees!), that in a past life was used to mature Barossa port. It's a beautifully refined whiskey, with an incredible amount of creativity, thought and effort into crafting it.
Only 100 bottles of the Jarrah were produced, and allocations were tiny - get in quick if you want to get a little taste of Australia.
About Applewood
Brendan and Laura Carter are two Australian beverage-making creatives, with a hand in both wine and spirit making pies. They own Unico Zelo and Applewood Distillery, and the ethos of both of their labels is to showcase Australia.
The use of native Australian ingredients is prevalent in their spirits, utilising a multitude of fruits and herbs from our sunburnt country - riberries, lemon myrtle, and barrels made of Jarrah wood.
