Young Will Gilbert has his first crack at _Petilant Natural_ in 2017. This is Sangiovese, pressed off early and sent to bottle whilst still fermenting, the crown seal capturing the living wine inside the bottle. No preservatives added. This ancient winemaking technique brought to life by a talented young NSW winemaker. An exciting development for the Gilbert family brand, a sign of Will's intent for exploration into the future. And most importantly, it's ludicrously delicious.
What it Tastes Like
Smells of fairy floss, fresh basil, strawberry coolie, and kombucha. Has that juicy watermelon quality, with the rind on. Nips and ticks with just enough tannin and the thirst-inducing acidity of a just ripe raspberry. Tops drinking on a warm Sunday arvo. Nice first crack from Will. Tumblers and sunshine needed.
Watermelon. Textured. Fine Bead. Hand bottled on 11th March 2017 before the completion of primary fermentation. Serve chilled. Gently shake bottled before serving. Mudgee, New South Wales.
