A basic and unpretentious approach to winemaking is what Rob Burley is keen on pursuing. He's not dogmatic, he wants to bring them to bottle as naturally as possible, but stable and clean. Doing things the right way. This Shiraz comes from the Seville region of the Yarra Valley. It was fermented as whole bunches, with no adjustments except a little SO2 at bottling. It's a crisp and spicy version of Yarra Shiraz. Perky in style and personality. A great alt-styling of the variety from this region. Ideal for the natural wine enthusiasts who want a vibrant and juicy wine to get stuck into.
What it Tastes Like
Red berries and pepper bush. Some greenery, mescal and perky red cherry flavours. It's a fresh, 'nouveau' still of Shiraz. Not weighed down with oak, but free to skip through the palate with crunch and spicy in toe. Cool look at Yarra Shiraz.
Raz Wilde (Shiraz) is from the same upper Yarra Valley vineyard that my 777 Pinot Noir came from (Seville). Whole bunches were sealed up before being pressed off two weeks later, back to stainless. This also was left on lees until being bottled with minimal sulfur.
