If Unico Zelo's River Sands Fiano is for easy-drinking and the Alluvium is for the cellar / special occasion, then this Slate Farm Fiano release is made for food. At least that's how Brendan Carter put it to us, and it's hard to argue with the #FianoMan when it comes to matters of this Italian sensation. Hailing from the Polish Hill area of the Clare Valley, this has both flavour and structure in spades, and with its spicy, savoury persona is really without comparison when it comes to Aussie Fiano.
What it Tastes Like
The nose is all lime and lemon zest, with spice, herbs and florals completing a fascinating bouquet. More citrus and some tropical notes on the palate, which is super-charged with savoury texture and searing acid giving imposing length. Interesting yet smashable!

Lime and oyster shell, faint nuttiness and tonic water. Unlikely combinations but the sum is a wine of brazen acidity and juicy deliciousness. Perfume is on point in lime, blossoms, cashew, saline whiffs, the palate similar but with a velocity that is almost breath taking; the wine pierces as it drives across the palate. The tiny spec of blue slate soil inside Polish Hill River that exists within the wider scope of Clare Valley is world-famous for it's ability to impart incredible minerality and tension to the white wines produced within it. Fiano seems to reach a depth of flavour here (courtesy to warm days and cool nights) that we don't often see in other regions (or on other soil-types). This a spicy, lime-licked Fiano, that begs for a great food match.

About the Producer
Unico Zelo is the project of winemaking couple Brendan and Laura Carter. In their words, their aim is to create “Italian-inspired, textural and site-expressive wines” and “Australian examples of Mediterranean varieties in an approachable and jovial fashion.”
Since bursting onto the scene in 2014 with their eye-catching, outrageously good value alternative vino, the Carters have spread their wings and their range. They now make a large suite of wines, including single vineyard examples of Fiano, Nero d’Avola and Nebbiolo. They are one of the most dynamic winemaking duos in the Adelaide Hills.
The Clare Valley knows what it does, and does it very, very well. Riesling and Shiraz are the rockstars of the region and with some of the most famous wines in the county coming from this small pocket of SA, the Clare’s reputation for quality only grows year on year.
Fiano is one of the most promising emerging white varieties in Australia. It’s a variety that likes to be warm and dry, exactly the kind of variety that is perfectly sustainable in Australia. Characterised by fresh fruit flavours, refreshing acidity and a lovely, slightly waxy mouthfeel, Fiano is a variety that is prospering across the country. It makes a great alternative to Sauvignon Blanc or Pinot Gris which is far better suited to the Australian climate.
