The See Know Evil Preservative Free Shiraz is a wine from Nicholas Crampton that aims to "establish a new benchmark for quality and consistency for Preservative Free Wines". The Hilltops Shiraz for this wine was grown on the Barwang vineyard, a vineyard that boasts the oldest vines in the region at 40 years of age. It was fermented with 30% whole bunches and made its way to bottle without any additions of any kind. Preservative free and very tasty, the 2016 received 91 points from Gary Walsh making it a no-brainer for those looking for easy drinking wines of this ilk.

Made naturally, bottled scientifically – The See, Hear, Speak No Evil wines aim to establish a new benchmark for quality and consistency for Preservative Free Wines through a combination of boutique, small batching winemaking and industry leading, technical ability for preparation and bottling. Winemaking: Sourced from some of the oldest vines in Hilltops at forty years of age. Hand picked into small bins and chilled before direct transport to the winery. Primarily de-stemmed before a slow, cool fermentation in small open fermenters with 30% whole bunch. No preservatives or additives of any kind. 10% Touriga was blended for additional complexity and structure. Matured on lees in stainless steel before bottling. 2016 Vintage: A wild ride of a vintage with high temperature spikes, heavy rainfall and other wild weather. But most of the excitement occurred early in the season or was of little direct impact before an almost perfect Autumn – warm and dry with cool nights. Vineyards were allow to ripen to perfection and a very successful crop was picked.

The Speak No Evil wines are made by Nicholas Crampton (Woods Crampton) and Corey Ryan (Sons of Eden). These wines are made with a hands off philosophy, the aim to make great value, delicious wines from organic vineyard with as little intervention from the winemakers as possible.
This is one to watch. The Hilltops in NSW has some huge potential. The high altitude vineyards in this region are producing some of the most epic cool climate Syrah/Shiraz and Cabernet on the market at the moment. With a relatively low profile (for now), the value to be had in this area is second to none. But get in quick, the word is getting out and it wont be that way for long.
