The Sinapius wines are built on a philosophy of fruit first, winemaking second. With their close planted vineyard at the centre of it all, wines like the Clem almost make themselves.
The 2016 is 50% Riesling with the balance being comprised of the aromatic varieties; Gruner Veltliner, Pinot Gris, Pinot Blanc and a dash of Gewürztraminer.
Everything was co-fermented and sent to old oak for five months on lees, with small portions receiving a few days on skins and a portion going through malo.
It’s a wine about balance and texture, all the varieties coming together to create harmony and deliciousness.
What It Tastes Like
Spiced pears and floral tones. Hints of citrus pith and a gentle underlying nuttiness. It glides through the mouth at a steady pace, cool, but with a racy line of minerality at its core balanced by a gentle creaminess. Thirst-inducing stuff. Lot of wine crammed in here. Balanced just so.

It opens a little cheesy, but clears to crystalline fruit and compelling texture. Crafted with natural yeast in old oak. No fining, with SO2 additions just enough for psychological reassurance.”

The second release of our Estate Grown field blend comprising of:
50% Riesling 30% Grüner Veltliner 15% Pinot Gris 3% Pinot Blanc 2% Gewürztraminer Sourced from our close-planted vineyards (5208-7700 vines/ha).
Handpicked together at very low yields with intense concentration of flavours, the grapes were whole bunch pressed, with some parcels crushed and left on skins for 48 hours. The varieties were co-fermented with wild yeasts, and maturated in old 500 litre puncheons, and kept on lees for 5 months. 15% of the wine went through malolactic fermentation.

About the Producer
Sinapius is a premium boutique Tasmanian winery started by two young, passionate winemakers. The couple, Vaughn Dell & Linda Morice, purchased the site when they were only 24-years-old and chose to plant their vines in the Burgundian fashion opting for high-density planting and low yeilding crops.
Their wines are of extremely high quality, made in small amounts and are highly sort after by collectors.
