Fourre-Tout translated into English means, 'catch all'. The Carsons have planted some varieties rarely seen in the Yarra Valley, including Grenache and Barbera to their small vineyard outside Yarra Glen. This is a Rosé desgined as a 'catch-all' for their favourite Rosé fruit each year. The blend changes but the style stays the same: crisp yet textural, dry yet full of flavour. It's a lovely drink and top value considering the quality of fruit and the winemaking talent behind this wine. A top-flight version of serious Yarra Valley Rosé.
What it Tastes Like

The 2016 Serrat Fourre-Tout Rosé is predominately Pinot Noir this year with a dash of Grenache Noir and Barbera representing 10% of the blend. It shows it's class with a really punchy and lifted bouquet. Strawberry and red currants with a hint of spice and a nice complex floral under current of violets and rose petals. The wine has a lovely mouthfeel and texture, shaped by a fine mineral backbone and the finish really drives on. Whole bunch pressed, barrel fermented in an old 500L puncheon, unfiltered and just delicious to drink now and over summer. [Fourre-Tout] French term meaning catch-all. We have planted a number of different varieties, many not associated with the Yarra Valley. From time to time, we will make a blend that we find irristibble and share the result with you .

About the Producer
Tom Carson is one of Australia’s most acclaimed winemakers. He has spent 12 years bring Yering Station to prominence as one of the Yarra Valley’s most revered wineries and now, Serrat is his baby. These wines come from Tom’s own block which he farms with wife Nadège Carson. They are Burgundian inspired. Their wines are receiving amazing reviews. A small producer making lots of noise in the Yarra Valley.
