The Save Our Souls Rosé is made from a blend of Pinot Noir and a portion of juice saingeed from the SOS Sangiovese. This is a crimson coloured delight to drink. The fragrance of Pinot Noir, the savoury undertones of the Sangiovese, every element doing its part. It's a perky drink inspired by the Rosés of Bandol, and at this price, there isn't much else with the interest or drinkability that Bill and Jason's Rosé offers.
What it Tastes Like
Lovely rose petal and strawberry perfume. There's smatterings of garden herbs and butter menthol sprinkled throughout. There's a little powdery tannin and cleansing acidity. Great buying if on the hunt for a no-brainer Rosé.
The juice was fermented in seasoned oak and no additions were made until bottling when a small out of Sulphur Dioxide was added. This year the majority of the wine was produced from Pinot Noir fruit harvested from the Coldstream area. Once again a small amount Sangiovese saingee was included in the finished wine.

Save Our Souls is a collaboration between Yarra Valley superstar Bill Downey and his longtime friend and colleague Jason Searle. Notoriously fickle to grow, this delicate red variety can deliver a kaleidoscope of flavours and aromas, from the bright and floral to the moody and mysterious and everything in between. The cooler regions of Australia are where Pinot Noir is most at home. Look to Tasmania and Victoria for the best examples, with some quality wines beginning to show from the Great Southern and from the cooler parts of NSW. Falling in love with Pinot Noir can be a life long affair, beware the charms of this most enchanting of grapes.
