The Pinemount Pinot Gris is a complex yet deliciously drinkable Pinot Gris from the Yarra Valley.
Calling on her vast wealth of experience acquired winemaking for Larry Cherubino and Tom Carson at Yabby Lake, there’s more thought and intention behind Imogen Dillon’s than your average Gris.
All was fermented in barrel, 50% with wild yeast, 50% with selected, it was aged in oak and regularly stirred. Imogen looking for ‘texture & interest” in this wine.
She’s done a great job. The balance here is superb, as is the drinkability. Great stuff for a debut release.
What It Tastes Like
Lightly musky, pink lady apples, floral aromas and cashew nuts. In the mouth it’s quite lean and dry with a citrus notes and a finish which is powdery, almost chalky. Really good example of serious Gris but which doesn’t skimp on drinkability.
A nose of lifted quince and musk continues on the palate, marrying with classic varietal characters of pear and nuances of clove and nutmeg. The wine is made to have texture & interest, the subtle phenolics pairing perfectly with the long savoury finish. This wine was fermented in neutral white French oak barriques, with 50% wild yeast and 50% selected yeast. The mixture of yeasts provides additional textures and weight. Stirring & time on lees in oak adds to the textural palate and allows a flavour driven length. No acid was added throughout the winemaking process allowing an even and natural balance of fruit and acid, with a soft & approachable mouthfeel.

About the Producer
This is Imogen Dillon’s solo project. After working for the likes of Larry Cherubino and Tom Carson at Yabby Lake, she is striking out on her own with this small range of hand made wines from the Yarra Valley. Her wealth of experience and sturdy hand in the winery clearly shining through in this detailed and refined set of wines.
The Yarra Valley stands tall as one of the country’s finest cool-climate wine regions. Only a short jaunt from Melbourne, the Yarra has become a tourist hot-spot for its stunning scenery, high quality produce, and of course, as the home to some of the country’s most iconic wine producers. From the extraordinarily elegant Cabernets and Syrahs that populate the ‘Valley floor’, to the precise and complex versions of Chardonnay and Pinot Noir that hail from the higher climes of the Yarra, this region is diverse and in a state of change. As temperatures rise and phylloxera infiltrates each pocket of the Yarra Valley, the range of alternative varieties from continental Europe is sure to increase to create a more colourful picture of the region. The Yarra embodies so much of what is great about the modern Australian wine scene.
Pinot Gris is a variety that can take on many forms. In one instance it’s crisp, racy and light as in the case of Pinot Grigio, the next it’s round and voluptuous, and sometimes it presents as pinkish or even red! This versatility makes it an incredibly interesting grape. It loves skin contact, it loves lees stirring, it loves anything a winemaker can throw at it, but always it will show lovely perfume, tasty fruit and excellent mouthfeel. It might just be the most underestimated white variety in the country.
