The Go With The Flow Mataro is a new wine in 2016 for Taras and Amber Ochota. This is a minuscule batch of fruit picked from a biodynamically farmed vineyard in the Barossa Valley. It was picked early in the season (for Mataro) and made with 100% whole bunches, the carbonic maceration bringing out the high-toned aromatics that this variety can show when treated just right. It's a gorgeous wine, dark and seductive with a wildness in its eyes. They made only 25 dozen and it's going to fly.

Very low yield biodynamically farmed. Handpicked mid March. Cold soaked for about 5 days until wild yeast fermentation. Gently pigeaged on top/carbonic maceration below. 11 days on skins and stalks. Basket pressed to seasoned French barriques for 6 months. Sporadic batonnage for the first 2 months. Unfined and unfiltered. No additions besides 30ppm SO2 at bottling

About the Producer
The term “rockstar winemaker” gets thrown around a lot these days but Taras Ochota, owner/purveyor of cult wine label Ochota Barrels, is the real deal. His grungy, minimalist attitude towards his label has seen him gain huge cult status internationally as one of the most boundary pushing “conceptual” winemakers in Australia.
From his home in the beautiful Basket Range of the Adelaide Hills, Taras and his wife Amber craft small batches of wine from surrounding vineyards in the Hills and special sites across McLaren Vale and the Barossa Valley. These are highly sought after and extremely limited wines which have a pulsating energy and drive to them. Some of the country’s most exciting wines, no doubt.
The Barossa has a big reputation. Big in every sense of the word. Known for producing blockbusting examples of impenetrable old vine Shiraz and Grenache envied by much of the world, it is a region that should be celebrated as the region that first put Australian wine on the map. Now, with a new generation of winemakers reinventing the region, there’s more than just power in the Barossa’s bag of tricks. With a move toward picking earlier and pulling back on oak maturation, there’s a fresher, more subtle side to Barossa wine which offers plenty to the modern Australian wine lover.
