This Pinot Gris was made to be drunk with gusto.
Brendan and Laura Carter are looking to “turn up the texture” with this new release. A portion of the fruit spent three weeks on skins and was blended back into the crisp, bright Pinot Gris they made from an earlier pick.
It’s barely blushed with colour, built for warm Summer days, big glasses and long chats. Supreme smashability here.
What It Tastes Like
Slightest onion skin tinge to the colour. It tastes of nashi pears, cashew nuts, and has a hint of chewiness in texture. There’s great drinkability here. It stays true to the variety but doesn’t feel over worked. Nice job here. Very likeable Gris.
Perched on an elevated and exposed site in the protected Northern Adelaide Hills.
Majority made in a fresh, clean style with only 48 hours on skins, the second, smaller batch spent three weeks on skins before being blended back in.

About the Producer
Unico Zelo is the project of winemaking couple Brendan and Laura Carter. In their words, their aim is to create “Italian-inspired, textural and site-expressive wines” and “Australian examples of Mediterranean varieties in an approachable and jovial fashion.”
Since bursting onto the scene in 2014 with their eye-catching, outrageously good value alternative vino, the Carters have spread their wings and their range. They now make a large suite of wines, including single vineyard examples of Fiano, Nero d’Avola and Nebbiolo. They are one of the most dynamic winemaking duos in the Adelaide Hills.
The Adelaide Hills may be the most energised wine region in the country. The sense of exploration and creativity amongst the tribe of talented young winemakers in this region is unparralelled. The Hills has become crucible of Australian wine talent, offering an array of varieties, from classics such as Shiraz, Pinot Noir and Chardonnay, to new varieties like Nebbiolo and Grüner Veltliner for the younger generation to play with. Every vintage brings new colour and complexity to the rich wine, food and produce culture of this cool climate region.
Pinot Gris is a variety that can take on many forms. In one instance it’s crisp, racy and light as in the case of Pinot Grigio, the next it’s round and voluptuous, and sometimes it presents as pinkish or even red! This versatility makes it an incredibly interesting grape. It loves skin contact, it loves lees stirring, it loves anything a winemaker can throw at it, but always it will show lovely perfume, tasty fruit and excellent mouthfeel. It might just be the most underestimated white variety in the country.
