The Harvest project is a revolutionary idea from the energiser-bunny couple that is Brendan and Laura Carter of Unico Zelo fame. This is a unique profit-sharing co-op between the couple and their growers and the first wines they have released from the project have been spot on! This is a Blanc de Blanc made from 100% Chardonnay. It was made in the same Charmat method used in the making of Prosecco. It's easy drinking with just the tiniest bit of sweetness to the fruit. Great fun fizz to smash back when the sun is out and a great way to support some of our local grape growers!
What it Tastes Like
Lemons, apples, a little spice and a lot of freshness. It's not overly complex but it does what it sets out to do. Sweet limes and a little peachy character. It's a dead-set thirst quencher. Chill it. Pop it. Rip into it.

Grown at the most exposed and elevated position in Birdwood, Northern Adelaide Hills. Soils: Alluvial quartz-shot clay. This fruit reaches a ripeness with a spritely acidity that lends itself incredibly well to a Sparkling style of wine - this is a 100% Chardonnay Blanc de Blancs. Made in the Charmat method.

About the Producer
Unico Zelo is the project of winemaking couple Brendan and Laura Carter. In their words, their aim is to create “Italian-inspired, textural and site-expressive wines” and “Australian examples of Mediterranean varieties in an approachable and jovial fashion.”
Since bursting onto the scene in 2014 with their eye-catching, outrageously good value alternative vino, the Carters have spread their wings and their range. They now make a large suite of wines, including single vineyard examples of Fiano, Nero d’Avola and Nebbiolo. They are one of the most dynamic winemaking duos in the Adelaide Hills.
The Adelaide Hills may be the most energised wine region in the country. The sense of exploration and creativity amongst the tribe of talented young winemakers in this region is unparralelled. The Hills has become crucible of Australian wine talent, offering an array of varieties, from classics such as Shiraz, Pinot Noir and Chardonnay, to new varieties like Nebbiolo and Grüner Veltliner for the younger generation to play with. Every vintage brings new colour and complexity to the rich wine, food and produce culture of this cool climate region.
Australian Chardonnay is a seductive variety that comes in all shapes and sizes. From the toasty and voluptuous to the lean, flinty and minerally, there is a Chardonnay out there to suit everyone. Australia’s developing prowess with this variety has been marked by the international community with wine writers such as Jancis Robinson marvelling at the outstanding value to be had right across the country. The prestige brands of Margaret River offer wines of deep flavour and power, often crafting fuller-figured Chardonnay of outstanding quality. The cooler-climate wines from the Yarra Valley, Tasmania and the like are more focused and linear, building complexity around a backbone of pristine acidity. Whatever your preference, there is an Australian Chardonnay to enchant all comers.
