The Chase Semillon is about the never-ending pursuit of purity for Matt Burton when making Hunter Valley Semillon.
Here he takes his best old vine Semillon, ferments only the cleanest and most vibrant juice and bottles it after four months on light lees. The 2016 version is possibly his best to date.
It received the Top Gold at the 2016 National Wine Show as the best Semillon in its class. It was also rated an outstanding 96 points by James Halliday - the highest rating of this wine to date.

93 points. “The more serious of the Gundog Sems and looks the part. Linear, with green apple fruit and just a little lemon grapefruit, it’s long and sprightly, although the acidity is not harsh. Indeed it’s quite full in the scheme of things, with mid-palate flesh making this entirely drinkable. Lovely lines here, and I smashed a whole bottle on a warm Sydney summer night.”

The foundation of the 2016 blend are wines produced from blocks of old vine Semillon grown on lighter soils in the Somerset vineyard. These sites delivered beautifully balanced grapes, with fantastic purity of flavour.
In the winery, double juice settling and racking was followed by cool fermentation. After four months on light lees, the wines were blended and gently fined prior to bottling.

About the Producer
GunDog Estate have a clear vision, a “determination to produce some of Australia’s finest Semillon and Shiraz”. By comparing and contrasting the styles of Semillon and Shiraz from the Hunter Valley and the Canberra District, they are endeavouring to paint a more complete picture of both varieties. Theirs is a young operation with big ambitions. Undoubtably, one of the must watch new projects from the Hunter.
