The Jo Perry plays around a bit here, pushing this Sauvignon Blanc into new territory for Dormilona.
The fruit is crushed straight into a combination of amphora and open top bins, then left to hang out of skins for a full month before bottling. No fining. No filtration. No adds. Just the awesome raw essence of Sauvignon Blanc.
If you’re in the market for crisp dry whites, you may want to look elsewhere. But if funky, textural wines with a wild personality are your thing, this is going to be right up your alley.
What It Tastes Like
This is Sauv Blanc on nitrous oxide. It’s pedal to the floor, passionfruit, green paw paw, jalapeño and mango. Loads of muth-filling phenolics littered amongst the fruit. All this craziness hangs on a thread of acid which keeps the story going in one direction. Great side a Sauv Blanc, here. Interest and drinkability in one.
This Sauvignon Blanc was hand harvested in the early hours of the morning, crushed directly into amphora pots & open bins. Wild fermented, hand plunged daily & left on skins to macerate for a good month. Basket pressed straight to back to amphora & barrel for natural malo. Battonaged with extra love until ready. Racked once, to blend & bottle. No additives, finings nor filtration. Only very minimal sulpur at bottling.

About the Producer
Josephine Perry is one of the most exciting emerging producers in Margaret River. Her Dormilona label is setting a new tone for the region. She is focusing on sourcing organically and biodynamically grown fruit, making wine with as little intervention as possible, and bringing an alt-styling to the hero varieties of this famous region.
These are Margaret River wines with flair and originality. The quality of her releases was vindicated with her winning the 2016 Young Guns of Wine Winemaker of the Year. Hers is a star on the rise as the scarcity and want for her colourful range increases year on year.
Margaret River is recognised as one of the country’s finest wine growing regions. The quality of the region’s finest Cabernet Sauvignon and Chardonnay rival the very best in the world. But Margaret River is no two-trick-pony. There, Tempranillo and Malbec are excelling, Touriga Nacional seems to be quite at home, Chenin Blanc is getting serious and even pockets of Nebbiolo are rearing their heads. Watch this space.
