This is Josephine Perry’s most exquisite version of Cabernet Sauvignon, the one that speaks most eloquently of her Wallcliffe vineyard in Margaret River.
This is Cabernet handpicked at perfect ripeness, foot-stomped and left to soak on skins for six months in amphora, then basket pressed and settled for a further three months in a large clay pot.
This is one of the purest examples of top-end Margaret River Cabernet you are likely to find. No additions bar a dash of SO2 to stabilise the wine in bottle. Mike Bennie hit the nail on the head when he called this a “Succulent wine of high finesse.” in his 94 point review.

Its a limited range of project wines hand made in pure terracotta amphora pots.
Dry grown from our single vineyard plot in Wallcliffe. Hand harvest, foot & hand stomped into the terrcotta pots. Hand plunged daily during wild fermentation then left on skins for six months with native malo. Basket pressed on a cold wintery day back to the amphora for maturation for three months. Hand bottled direct from the potts, sealed under cork with a wax top. No fining, no adds, no filtration, no pumping, no gas, only good old candle power & knuckle grease. Plus very minimal sulphur at the bottling process - this is to ensure no bottle variation & to eliminate any oygen pick up.

About the Producer
Josephine Perry is one of the most exciting emerging producers in Margaret River. Her Dormilona label is setting a new tone for the region. She is focusing on sourcing organically and biodynamically grown fruit, making wine with as little intervention as possible, and bringing an alt-styling to the hero varieties of this famous region.
These are Margaret River wines with flair and originality. The quality of her releases was vindicated with her winning the 2016 Young Guns of Wine Winemaker of the Year. Hers is a star on the rise as the scarcity and want for her colourful range increases year on year.
Margaret River is recognised as one of the country’s finest wine growing regions. The quality of the region’s finest Cabernet Sauvignon and Chardonnay rival the very best in the world. But Margaret River is no two-trick-pony. There, Tempranillo and Malbec are excelling, Touriga Nacional seems to be quite at home, Chenin Blanc is getting serious and even pockets of Nebbiolo are rearing their heads. Watch this space.
