- The Home of Artisan Australian Wine!
Nav Singh believes that minimal intervention creates the best wines. He has been called a "rare talent" by Gourmet Traveller Wine for his expressive and intricate renditions of Tasmanian wines. His Lionheart Amphora Pinot Noir was fermented on skins for 90 days inside an inert clay vessel. The vessel creates a slow circular motion during ferment that ensures even temperatures and a slow, steady extraction without the heady influence of oak to mask the characters of the fruit. No additions apart from a hint of sulphur prior to bottling. This is a fascinating and rare Pinot Noir. It was made in only small volumes but is the closest thing to a vineyard in a bottle that Nav can muster. Glorious Pinot Noir for those seeking premium wines with interest. Only 50 dozen made.
What it Tastes Like
Pretty and poised. This is filled with floral aromatics, roses and violet, and sweet baked rhubarb and plum skin. There's a crispness to the tannin, lovely shape and definition through the mouth. A succulent wine with loads of energy. It's lovely and unique.
50 dozen (600) bottles produced Energetic pinot noir crafted in clay amphora. Living wine relying on ancient knowledge and intuition. Energetic wine of expressive character and lo-fi technique. Domaine Simha Amphorae wines are crafted in white clay fermentation vessels. Derived from the cosmic golden ratio, the ovoid shape promotes a gentle passive convection current. Wine is energised by constant motion and naturally maintains a stable temperature. Micro porosity allows wine to breathe and evolve over time. Intricate geometric patterned Amphorae labels reference the exquisite architectural beauty of jali screens carved in stone. About the Producer
Indian-born winemaker Nav Singh brings a holistic philosophy to his small but elite Tasmanian operation. He makes ultra-small batches of premium wines from vineyards farmed sustainably in the Derwent Valley. He comes at winemaking with a natural bent, the wines produced with a view towards biodynamics. These are wonderful, idiosyncratic wines that offer a different view of Tasmania.
No variety captures the hearts and minds of the wine lover quite like Pinot Noir. It’s the unicorn of many a winemaker. Notoriously fickle to grow, this delicate red variety can deliver a kaleidoscope of flavours and aromas, from the bright and floral to the moody and mysterious and everything in between. The cooler regions of Australia are where Pinot Noir is most at home. Look to Tasmania and Victoria for the best examples, with some quality wines beginning to show from the Great Southern and from the cooler parts of NSW. Falling in love with Pinot Noir can be a life long affair, beware the charms of this most enchanting of grapes.
