Nav Singh believes that minimal intervention creates the best wines. He has been called a "rare talent" by Gourmet Traveller Wine for his expressive and intricate renditions of Tasmanian wines. His Lionheart Amphora Pinot Noir was fermented on skins for 90 days inside an inert clay vessel. The vessel creates a slow circular motion during ferment that ensures even temperatures and a slow, steady extraction without the heady influence of oak to mask the characters of the fruit. No additions apart from a hint of sulphur prior to bottling. This is a fascinating and rare Pinot Noir. It was made in only small volumes but is the closest thing to a vineyard in a bottle that Nav can muster. Glorious Pinot Noir for those seeking premium wines with interest. Only 50 dozen made.

What it Tastes Like

Pretty and poised. This is filled with floral aromatics, roses and violet, and sweet baked rhubarb and plum skin. There's a crispness to the tannin, lovely shape and definition through the mouth. A succulent wine with loads of energy. It's lovely and unique.
