One of the goals of Scott Comyns with his and wife Missy’s new Comyns & Co. label was to explore alternative varieties in the Hunter Valley, and this Fiano is one hell of a start.
Compared to most Hunter Valley white wines which are made pretty conventionally, this was left on its skins for a couple days and then wild fermented to create a really alive, interesting and wholly satisfying wine.
Scotty reckoned it was great fun to make and it’s certainly great fun to drink. 91 points from Campbell Mattinson (“it’s very good”), and another fabulous Aussie Fiano.

This Fiano was an enjoyable wine to create from start to finish.
Left on its skins for two days cold soaking before being pressed.
A full solids ferment, this wine was wild and with a mind of its own! It displays a real tropical, pine lime splice aroma with a defining structure and luscious texture.

The Hunter Valley is the home of Semillon in Australia. Arguably the best in the world, Hunter Semillon is one of Australia’s most truly unique wine styles. Add to that the fact that have been producing some of Australia’s best quality Shiraz for over a century and you can see why this is one of our most loved wine regions. But with a new generation of winemakers comes innovation. Now we are seeing risks being taken, new varieties being planted and some inspired winemaking which is writing a new chapter in the Hunter Valley’s rich history. We can’t wait to see what happens next.
Fiano is one of the most promising emerging white varieties in Australia. It’s a variety that likes to be warm and dry, exactly the kind of variety that is perfectly sustainable in Australia. Characterised by fresh fruit flavours, refreshing acidity and a lovely, slightly waxy mouthfeel, Fiano is a variety that is prospering across the country. It makes a great alternative to Sauvignon Blanc or Pinot Gris which is far better suited to the Australian climate.
