If you are looking for a ‘classic’ Sauvignon Blanc, then the Chapter wines offering may not be what you are looking for but to those exploring the more exotic side of the variety, this should be right up your alley.
This is fruit from the Yarra Junction appellation of the Yarra Valley, vinified in old oak and ceramic egg. Winemaker Jared Curwood looking to build texture and complexity throughout the wine, allowing gentle oxidisation with zero additives or preservatives throughout the process.
This is a naturally made and bottled, wild-but-not-too-wild style of Sauvignon Blanc that is as delicious as it is interesting.
What It Tastes Like
A gentle whiff of sea breeze, lime splice, jalepeño peppers and passionfruit. Varietal characteristics of the Sauv Blanc still shine through but it’s definitely a little ‘out there’ in style. It’s slightly cloudy and funky but the cool saline freshness is retained, which is integral. Very cool.
Aged in 300 & 500 litre French and Italian barrels and ceramic. Contains only naturally occuring sulphites.
