Jason Brown has spent a lot of time touting the virtues of Hilltops Shiraz, Cabernet and Chardonnay, and he's been doing a very good job at it. The Cato range of wines is his shiny new project centred around exploring possible future varieties for the Hilltops region. This is the first release of the Cato Rosé, and it's a cracker. Made from fruit off fledgeling plantings of Nebbiolo, Garnacha and Primitivo, this is a dry, pale, savoury Rosé with a distinct lift of spice. Beautiful drinking for the Summer months. A great first outing for Jason and this wine.
What it Tastes Like
"A pale salmon hue. The nose is laced with raspberry and summer berries with notes of freshly dried provencal flowers and herbs. The palate is dry and unexpectedly textural. Lifted red berries on a creamy, savoury palate with a lovely, tight line of acid that carries the flavours along whilst giving a refreshing finish." - Jason Brown (Winemaker)
A blend of Nebbiolo, Garnacha and Primitivo. In 2016, we had an easy, moderate, dry year with a warm finish. Fruit ripened gently and evenly achieving excellent flavour development. There was zero disease pressure. The fruit was chilled and pressed to tank with a press cut at 500 litres. This minimised skin contact and ensured only the pristine, free run juice was fermented, resulting in minimal phenolics. The juice was removed from lees and fermented at low temperatures to retain the fruit’s natural vibrancy and delicate aromatics. The Nebbiolo and Garnacha were co-fermented for 20 days before being blended to the Primitivo post ferment.

This is one to watch. The Hilltops in NSW has some huge potential. The high altitude vineyards in this region are producing some of the most epic cool climate Syrah/Shiraz and Cabernet on the market at the moment. With a relatively low profile (for now), the value to be had in this area is second to none. But get in quick, the word is getting out and it wont be that way for long. Love yourself the more refined side of Shiraz? The Hilltops is a place you really need to check out.
Nebbiolo is one of the world’s truly great wine grapes. Most famously produced in the Italian regions of Barolo and Barbaresco, this king-pin of varieties is making a surge on Australian soil. A notoriously late ripening variety, Australian producers are constantly refining the way they grow this grape. Nebbiolo wines are light to medium bodied with incredible internal power and structure. These wines can live for decades when grown on the right sites. The classic descriptors of ‘tar & roses’ are often applied to this variety but the scope for complexity and nuance in the best versions is virtually limitless. The life of a great Nebbiolo as it matures through the years is one of the great wonders in all of wine.
