This is a great example of one of the many different faces of Sauvignon Blanc.
Winemaker Dave Messum lets this Sunbury Sauv Blanc hang out on skins for 62 days before pressing and settling in tank. It’s bottled not long after, unfined and unfiltered for max impact and chewy texture.
Dave is looking for a wilder side of the variety and he’s found it.
He only made 52 dozen for this release and it’s been exceedingly popular so won’t last long. Dive in quick if you want a chance to try it.
What It Tastes Like
Mandarin, campari, some bath salts and a kick of jalepeno. Only slightly golden in colour but the skins have done the job. Gee this is a tasty drink. Builds in texture then releases on a fine thread of acid with a crackling spiced orange close. Pretty cool.
Fermented for 62 days on skins. Racked, unfined, unfiltered. 52 dozen made
