This is not your average Sauvignon Blanc…
Grown on the ‘hungriest’ part of the organic Blind Corner vineyard in Margaret River, this Sauv Blanc holds more than meets the eye.
An early portion of grapes are plucked by hand, then air dried before the rest of the vineyard is harvested. The second pick is pressed to old wood. The two batches are then combined and left on lees in barrel for 7 months before bottling. “We’re ultimately going for smashability, but we still want texture and interest and a wine that reflects the vineyard.” says owner/winemaker Ben Gould.
The result is a savoury, textured Sauv Blanc with power and panaché. A wine made with creative flair and one eye each on interest and drinkability. Only small amounts available and already sold out at cellar door.
What It Tastes Like
Wasn’t expecting that! The smells almost tobacco-y, well at least savoury. Something like fresh cut hay, and exotic spice. There’s plenty of varietal tropical fruit set amongst the rich, slick mouth feel. Not too grippy, not too light… They’ve got the balance just right.
This wine is from a single block of Sauvignon Blanc at the top of the hill. Hungry soils and dry-growing ensure the grapes crop very low.
A portion of the grapes were hand-picked and air-dried prior to the picking of the balance of the fruit. It is wild fermented on skins and then basket pressed to top the wine from the remainder of the block
The remaining grapes are basket pressed and wild-fermented in old french oak. The wines were combined and lees stirred occasionally for 7 months prior to bottling.
